KOVAL's allocated bonded rye: the same 100% organic rye as its standard rye, heart cut only, aged at least four years in 30-gallon charred oak in Chicago and bottled as numbered single barrels at 100 proof. KOVAL describes it as bolder and spicier than the 80-proof rye, with grain-forward spice and cinnamon and ginger throughout.
