Holladay bottles batches at the exact proof they come out of the barrel after at least six years in its original Weston rickhouses. Proof differs every release; Iowa lists 120.

Expected notes: Caramel, Vanilla, Charred oak, Cinnamon, Brown sugar, Ethanol heat.
