Barrell Craft Spirits' Stellum line: a cask-strength blend built on three Indiana bourbon mash bills, two high-rye and one nearly all corn, with older Kentucky and Tennessee barrels folded in. Stellum cites clove and allspice on the nose, vanilla and cotton candy turning to black pepper and cinnamon, and a candied-ginger finish.
