What to expect

Cleveland's flagship bourbon is made with the company's patented pressure-aging process: young spirit is put in contact with charred oak cut into small pieces and run through pressure and temperature cycles, typically over about a day, instead of resting for years. Bottled at 100 proof, expect fresh, assertive oak and sweetness rather than the depth of long barrel time.
